Homemade Pizza Sauce

I love pizza - to the point we have it once a week.  I use my fresh tomato sauce to make my pizza sauce, but you can also use canned tomatoes...

The Recipe With Fresh Tomato Sauce -


2 Cups - Fresh Tomato Sauce

1 Tbs. - Olive Oil

2 Tbs. - Tomato Paste

1/2 Cup Dry White Wine

1 Ea - Large Garlic Clove

1 Tsp. - Dried Oregano Leaves

1 Tsp. - Dried Basil Leaves

Kosher Salt to Taste

Fresh Cracked Pepper To Taste


The Recipe With Canned Whole Tomatoes -

1 Can - 14.5 oz Whole Canned Tomatoes

1 Tbs. - Minced Onions

1 Tbs. - Olive Oil

2 Tbs. - Tomato Paste

1/2 Cup Dry White Wine

1 Ea - Large Garlic Clove

1 Tsp. - Dried Oregano Leaves

1 Tsp. - Dried Basil Leaves

Kosher Salt to Taste

Fresh Cracked Pepper To Taste

 If you're using canned tomatoes - process them as shown in my American Pasta Sauce - Seed, cut away bad spots and stem ends, save the juice, chop the tomato meat - mix with juices.

Time to Cook -

In a non-reactive sauce pan heated to medium, add oil, garlic, and herbs (Add onions, if you're using canned tomatoes).  Mix these and allow to heat for a few moments.

Add tomato paste, and stir continually.  This will concentrate the sugars in the paste.  Make sure that this does not burn!

After a few minutes, add the white wine and allow this to reduce.  Cooking the tomato paste and reducing the white wine will take care of the acidity in the final product.

Add Fresh Tomato Sauce - or - Chopped Tomatoes.  Stir and taste the sauce for herbs and pepper - Make your adjustments now.  Wait for tasting for salt after the sauce is reduced.

 Reduce heat to medium low and allow pizza sauce to reduce.  

 If you're using canned tomatoes - there are fewer tomatoes, so you won't need to cook the sauce as long.  

 What you're looking for is, when the sauce is allowed to stand, there won't be a "puddle" of fluid gathered at the top of the sauce.

Smooth the Pizza Sauce using which ever method you wish - Stick blender, blender, or potato masher.  Taste for salt and adjust.  Allow to cool to at least room temperature before making your pizza.

Use a Potato Masher, Stick Blender, or Blender to Smooth Sauce

When my sauce was done, I ended up with just under 2 cups of Pizza Sauce.
