Candied Nuts

Candied Nuts are easy to make and are a tasty treat.  Depending on the spice you use, with cinnamon, they are a great after school treat with apple slices for the kids; with Chinese 5 Spice powder, they are a great snack with cocktails; with vanilla, they are wonderful with coffee; plain, they are great on a salad...

The Recipe -

One Large or Extra Large Egg White

2 Tbsp. Sugar

3 Pinches of kosher salt

 Seasoning - If you are using a dried spice (cinnamon, ground anise, or 5 spice powder – anything sweet) - 1/2 Tsp.  

If you are using Pure Vanilla Extract, 1 Tsp. 

My favorite is to add a 1 Tsp honey and a pinch of cayenne pepper. 

Egg Foam

Egg Foam with 5 Spice Powder

Put all of these ingredients into a stainless steel bowl.  If you don't have stainless, it’s not the worst thing to happen - you aren't making a meringue.  Use an electric beater or whisk to create a light foam.

 Roasted Nuts on Parchment

Add 3 Cups of Pecans and coat them with the froth.  Make sure that you use a greased parchment paper to cover your pan and then pour the nuts onto the baking sheet.  Put into a 350 Degree F for 10 minutes.  Allow to cool before pouring into a serving bowl.
