Aunt Catherine's Apple Cake

My Aunt Catherine used to bake this cake.  Uncle Curly had a sweet tooth like no one else. This is a quick and easy cake to put together, and it is moist and flavorful.

The Recipe -

3 Cups - Unpeeled Apple

1 1/2 Cups - Sugar

3/4 Cup - Corn Oil

2 Each - Eggs

1 3/4 Cups - All Purpose Flour

1 Tsp. - Cinnamon

1/2 Tsp. - Kosher Salt

1 Tsp. - Baking Soda

1/2 Cup - Chopped Nuts - Walnuts or Pecans

Mix the dry ingredients in 1 bowl and whisk together.  Put the wet ingredients - including sugar - into another bowl.  Mix this making sure the eggs are incorporated.

Ingredients for Apple Cake

Incorporate all of the ingredients into one bowl with the apples and nuts.  This is a very thick batter.

Your Batter Will Be Darker - I'm Allergic Cinnamon

I used a 8" x 12" glass cake pan and bake in a 350 Degree F for 50 - 55.  Poke a tooth pick in the middle of the cake and make sure it comes out clean.

This cake is so good, I don't bother with icing or glaze.  That's your call - I like it plain.
